It seems like every time I buy bananas I either buy too many or not enough. Some weeks, my kids eat every banana in the house in two days. Other weeks though, they don’t touch any of the bananas.
I never know how many to buy and it drives me insane! Recently, I bought extras because the week before my kids had one of those eat all of the bananas in the house in a day weeks. So you can imagine my disappointment when the following week I returned home with enough bananas to feed an army and my lovely children refused to touch them.
Well, when life gives you overripe bananas, what else can you do other than start baking! First up on my banana baking weekend is double chocolate banana bread.
How to Make Double Chocolate Banana Bread
Baking is not really my strong suit. I tend to prefer savory cooking and super simple desserts as opposed to baking, but this banana bread was just so easy to make!
Ingredients
- 3 overripe bananas
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/4 cup cocoa powder
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup vegetable oil
- 1 tsp salt
- 1 tsp baking soda
- 1/2 cup chocolate chips
If you don’t want to make this double chocolate, or just don’t want to buy the cocoa powder, you can use another 1/4 cup of sugar instead.
Easy Banana Bread
Preheat your oven to 425° and combine all of the dry ingredients into a large mixing bowl.
Peel your bananas and place them in a bowl. Mash the bananas until they are nice and smooth!
When your bananas are mashed, you can start slowly adding your wet ingredients into your dry ingredient bowl.
Combine all of your ingredients until you have a mostly smooth batter. It doesn’t have to be perfectly lump-free. As long as all the ingredients are combined, you are good! Over-mixing is not something you want to do when baking as it can ruin the texture of the finished result.
See, mine is still pretty lumpy! Most of that is the chocolate chips, but some if it is slightly lumpy mashed bananas.
Now you just need to pour that beautiful batter into your bread pan. Make sure that pan is nice and greased first though. Either use cooking spray or rub it down with a little bit of vegetable oil.
Pop your bread in the oven and let it cook at 425° for 10 minutes. After 10 minutes, drop the temperature down to 350° and cook for about 30-45 minutes more. Check the doneness of your bread with a toothpick or knife. If it comes out clean, you are done and good to go!
