Keto BBQ Chicken Casserole with Cheese and Bacon is a super simple weeknight dinner. It is low carb, delicious, and super easy to make!
Cutting out carbs doesn’t have to mean cutting out the flavor! I’m not gonna lie, I love carbs. Pasta, sweets, bread…. they are my weakness for sure but having some really delicious keto recipes to make, helps lessen the blow of not being able to stuff my face with mashed potatoes.
Keto BBQ Chicken
Really, how can you go wrong with cheese, bacon, and BBQ sauce? It is easy to make, delicious, and free of all those pesky carbs! You just have to make sure to pick up a sugar-free BBQ sauce and you are good to go!
Ingredients
- Chicken Breasts
- Sharp Cheddar Cheese
- Cooked Bacon Pieces
- Mushrooms
- Red Onion
- Sugar-Free BBQ Sauce
As I said, the key is the sugar-free BBQ. If you aren’t worried about carbs or staying in ketosis, you will be fine to use a regular sauce.
Chicken, Cheese, Bacon BBQ Casserole
If you want to replicate this recipe, first thing’s first! Start by marinating your chicken breasts in some of the BBQ sauce. You don’t need much, just enough to coat all of the chicken. Let it sit in the fridge for as long as you would like, but at least an hour.
You can go ahead and dice up about a half of a red onion while you wait on the chicken to marinate and set it aside.
For the bacon, you can cook up a few pieces and set them aside, or feel free to use precooked bacon pieces ( I did the latter for simplicity and time).
When you’re ready, start by cooking the chicken in a hot skillet. You only need to cook them for about 4-5 minutes on each side, until they are browned. While they are cooking, preheat your oven to 425°
Then you will want to transfer them into a large oven-safe dish.
Top the chicken with a little more sugar-free BBQ sauce. Then load it up with mushrooms and diced red onions.
Next, add on a layer of sharp cheddar cheese and a heaping pile of bacon bits! Pop it in the oven and bake it for 20-25 minutes.
Once the chicken is fully cooked, you are ready to enjoy your Keto BBQ Chicken!

- 8 oz Mushrooms
- 1/2 Red onion, Diced
- Precooked Bacon Bits
- Sugar-Free BBQ Sauce
- Shredded Sharp Cheddar Cheese
Instructions

Preheat your oven to 425°.

Cook chicken for 5 minutes on each side in a hot skillet, until browned on both sides.

Transfer chicken to an oven safe pan.

Top with BBQ sauce, then layer on mushrooms and onions.

Smother with bacon bits and cheese.

Bake for 20-25 minutes.

I am making this recipe today! I saw this on a social media post a few days ago and it looks delicious. I especially love the it is a Keto recipe as I am loving that diet and want to get into it and recipes like this will help me to do just that so thank you.

I'm vegetarian so I will not be able to try this recipe with chicken but it sure looks like a really versatile way to make a family meal.
