A good grilled cheese sandwich is one of my favorite family-friendly recipes. The kids always love it, and they are so easy to make! Basic grilled cheese can get a little boring though, so I am always trying to make something new and different every time.
I have made air-fryer grilled cheese with avocado, basically grilled cheese, grilled ham, and cheese, but I think this brie and apple grilled cheese with raspberry jam may be my new favorite.
How to Make a Brie Apple Grilled Cheese
If you are ready to impress your family with the fanciest grilled cheese they have ever had, then this is the recipe for you. Everyone will think you are fancy and worked hard to make this sandwich, but really, it is shockingly simple and only takes a few minutes to fully prepare.

Grilled Cheese with Brie and Apples
For such a simple recipe, this really comes across as one of my most “fancy” sandwiches ever.
One common question when I make this is always “do I have to cook the apples before making the grilled cheese?” The answer to that is no. You don’t HAVE to cook the apples before making this sandwich. I do not cook the apples first when I make this.
The trick with the apples is to slice them SUPER thin. I like to use my slicer to make it super easy to get the apples extremely thin. You totally can pre-bake apple slices if you would like to, but with thin apple slices, it is not a necessary step.
Another tip to make this process easier is to make sure the brie is at room temperature. The first time I made this grilled cheese, I tried to spread cold brie right out of the refrigerator onto the sourdough bread. That was a big mistake!
Cold brie does not like to spread. This is a soft cheese, not sliced, and you will rip through the bread if you spread it cold. So take it from me, set the brie out an hour or so before you decide to make your sandwich!
How to make a grilled cheese fancy
Now that you have all my little tips and know what mistakes to avoid, you’ve totally got this in the bag. Spread your brie on one side of the sourdough bread. Then slather the other piece of bread in raspberry jam.
Place your thinly sliced apples on both slices and close your sandwich. Butter the outside of your sandwich and cook in a hot skillet for about 3-5 minutes on each side! Cover the pan with a lid for about a minute while you cook to help melt the cheese!
