This beef noodle casserole is a perfect weeknight meal that the whole family will love. A simple rich tomato sauce over egg noodles, topped with cheese and done in under 30 minutes
Sometimes I just need a super easy dinner. Between my day job, working from home, and still having to take care of the kids…. I just don’t always have a lot of time to cook a super elaborate meal.
When I need something quick and easy, my go to usually involves me pulling out a pack of ham burger meat for the freezer, scrounging through the pantry, and throwing things together that I think would go well together.
Sometimes these thrown together meals are a hit, sometimes they end up with me ordering a pizza... But luckily this beef noodle casserole was one of the winners. The kids loved it, I loved it, and it was done in less than 30 minutes!
How to Make Beef Noodle Casserole
To get started with the beef noodle casserole, you will want to brown your beef and cook your onions. Once the beef is completely browned and the onions are soft, drain off any excess beef fat.
Over medium/low heat, add in a can of diced tomato, can of tomato sauce, minced garlic, Italian seasoning, a pinch of sugar, and a dash of balsamic vinegar.
Yes, I put sugar in my pasta sauce. It helps cut the acidity of the tomatoes and gives a really great flavor to the finished dish. It doesn’t take a lot, just a small pinch and you are good to go.
The Balsamic really gives the sauce an amazing flavor as well, but you only want to use a small amount as it can be overpowering if you use too much. While I don’t measure it (just a dash) it is roughly half a TBSP.
While the sauce for the beef noodle casserole is cooking, boil your egg noodles and preheat your oven to 350°.
Once your egg noodles are done, pop them into an oven safe pan. I use a 9 bu 13 glass pyrex pan but feel free to use what you have. Mix the sauce in with your noodles, cover with cheese, and bake for about 15 minutes.
Once it’s done, let it cool and enjoy! Really, this recipe could not be easier, and is made with ingredients that you probably already have in your pantry!

Easy Variations for Beef Noodle Casserole
Something I love is a recipe that can be changed based on my tastes. This casserole can easily be added to and tweaked to fit almost every taste… Try swapping out the beef for ground turkey or Italian Sausage...
Add in some diced zucchini for an extra hidden veggie punch!
Try a different noodle… elbows, bow ties, the options are limitless!
Beef Noodle Casserole
An easy under 30 minute meal, this beef noodle casserole features ground beef, tomato, egg noodles, and cheese!
Ingredients
- 1 Lb Ground Beef
- 12 oz Egg Noodles
- 1 Onion Diced
- 1 tbsp Minced Garlic
- 1 tbsp Italian Seasoning
- 1 tsp Sugar
- 16 oz Tomato Sauce
- 15 oz Diced Tomato
- 1 splash Balsamic Vinegar
- 1-2 Cups Shredded Cheese Italian Blend or Mozzarella
Instructions

Preheat oven to 350° and boil water.

Start browning the beef in a large pan over medium heat. Add in the onions and garlic and allow to cook until the beef is fully browned. Drain excess fat from the pan if necessary.

While the beef is cooking, boil the egg noodles according to the package.

Over medium/low heat, mix in the Tomato sauce, diced tomato, balsamic vinegar, sugar and Italian Seasoning. Combine and let simmer for 3-5 minutes in the pan.

Combine the cooked egg noodles and sauce in a 13 by 9 oven safe dish. Cover with shredded cheese, and bake for 15 minutes.

I'm vegetarian, and I can't have this platter for myself, but I can definitely pass the recipe along. I have a friend that would love this recipe. I can also do a variation with just cheese for me. Thanks for sharing!

You could totally substitute out the meat for an alternative. My friend uses lentils, and I know there are some good ground beef alternatives at the store now. Even doing just more veggies in place of the beef would be delicious.
