Keto Broccoli Salad
For quite some time, I was thriving on the keto diet. I felt amazing, I was losing weight, and honestly, I was happy with how I was eating.
Life happened though, and I “fell off the wagon”. It wasn’t hard to fall back into my unhealthy eating habits and gain a chunk of my weight back.
After realizing how terrible I was starting to feel again, I knew I had to make a change and get back to low carb, keto eating.
So what did I do first? I made a meal plan and took off to the grocery store to get all of the food I need for a week of clean, low carb eating!
I like to prep dishes so I don’t have to make something every single day, and I decided that a creamy low carb broccoli salad would be a perfect lunch option for the week! This was such an easy keto recipe to make! Simple, fresh, and delicious, keto broccoli salad is a new favorite for me!
It is a great lunch that I can eat all week… But it would also be perfect to take to a summer cookout!
How To Make A Low Carb Broccoli Salad
This is probably one of the easiest recipes I have created. It took me just a few minutes to throw everything together and can be easily customized depending on your personal tastes.
Most of the ingredients are probably already sitting in your refrigerator or pantry right now!
- 1 head of broccoli
- 1 cucumber
- 1/2 red onion
- 1-pint cherry tomatoes
- 1/2 cup shelled sunflower seeds
- 1 cup mayo
- 2 tbsp apple cider vinegar
- 2 tbsp monk fruit sweetener
- dried dill
The only thing that is a little more obscure is the monk fruit sweetener. This is optional though. Feel free to leave it out completely if you don’t want the salad to be extra sweet. You can also use any sugar substitute that you prefer.
Creamy Broccoli Salad
To start, wash your veggies! I know, I probably shouldn’t have to say this but I feel like it needs to be said!
Once all your veggies are all clean, it is time to slice and dice! Thinly slice your cucumber, tomatoes, and onion. I used a slicer since I cannot work a knife good enough to get them all as things as I wanted.
You will want to cut up your head of broccoli as well and add it to a large bowl along with the rest of your thinly sliced veggies.
Dump in your sunflower seeds. This step is optional as it adds in extra carbs, but I really like the crunch that it gives to this dish!
Now you want to make your dressing. Take 1 cup of mayo, 2 tbsp of apple cider vinegar, and 1-2 tbsp monk fruit sweetener and mix together until well combined. Mix in dried dill to taste (optional).
Pour your dressing into the large bowl with the veggies and combine well.

Low Carb Broccoli Salad

Ingredients
- 1 head Broccoli
- 1 Cucumber
- 1 pint Cherry Tomatoes
- 1/2 Red Onion
- 1/2 cup Shelled Sunflower Seeds

Instructions

Thinly slice your cucumber, tomatoes, and onion and add to a large bowl.

Cut up the head of broccoli and add florets to the bowl.

Mix in sunflower seeds. (optional)

Make the dressing with Mayo, sweetener, vinegar, and dill in a bowl.

Mix the dressing into the veggies and combine well.
