With school back in session, sports and after school clubs in full swing, and work ramping up… Fall is a busy time of the year. I have less and less time to cook due to work and school obligations, but my family still wants to eat every night. So, what’s a mom to do?
Break out the handy dandy slow cooker! That’s what! Fall is the perfect time of the year for slow cooker dinners. In my hunt for a new go to meal, I decided to change up an old favorite. As you may know, I loveMexican food. Tacos, enchiladas, quesadillas… You name it, I will eat it!
So creating a unique Mexican inspired slow cooker dish seemed to be a no brainer! I wanted it simple enough that my whole family would love it, but just different enough to take the tastes to a new level. And thus, the marinated pulled pork quesadilla was born.
Slow Cooker Pulled Pork Quesadillas
If you are ready to recreate this recipe with me, first you will need a few easy ingredients. All of these are available at your local Walmart store. Making it convenient and easy to pick up everything you need in once place.
Pulled Pork Quesadilla Ingredients
- Smithfield Steakhouse Seasoned Fresh Pork Tenderloin
- 1 Green Pepper
- 1 Medium Red Onion
- Soft Flour Tortillas
- Shredded Cheese
- Sour Cream
- Cilantro (optional)
I use the Smithfield Marinated Fresh Pork in this recipe because it incorporates real fresh flavor real fast! It is perfectly marinated and seasoned, making it the best option for quick and versatile meal solutions that can be ready in about 30 minutes or less. I use it for so many of my weeknight meals too, not just this one. It can be easily roasted, baked, or sauteed for a wide variety of different recipes.
How to Cook Pulled Pork Quesadillas in the Slow Cooker
Once you have all of your ingredients, you are ready to go! Get your slow cooker out and get ready to fill your kitchen with the most delicious smells that are about to waft out while your dinner is slowly cooking.
Place the pork in your slow cooker along with sliced green pepper and red onion. Set your slow cooker to low and let it do its magic for about 5-6 hours or until the pork is fork tender. There is no need to add in any extra seasoning or water. The marinated pork is perfectly seasoned and needs no additives.
Once your pork and veggies are cooked and your kitchen smells so good that you are literally salivating, you can assemble your quesadillas. Heat a pan with a little butter over medium heat.
Place one soft tortilla in the pan, top with the pork and veggies and some shredded cheese. Top with another tortilla and cook for about 2 minutes on each side or until both sides are golden brown and the cheese is melted.
Now all that is left to do is serve it up with some sour cream and cilantro! Seriously, it is that easy! Don’t let the ease fool you though, these slow cooker pulled pork quesadillas are packed with flavor and are highly likely to become your next weeknight favorite!

Ingredients
- 1 Smithfield Steakhouse Seasoned Fresh Pork Tenderloin
- 1 Green Pepper
- 1 Red Onion
- 1 Pack Soft Flour Tortillas
- 1 Cup Shredded Cheese
- Sour Cream
- Cilantro
- 1 Tbsp Butter
Instructions

Slice your Green Pepper and Onion.

Place your Smithfield Marinated Fresh Pork, Pepper and Onion into your slow cooker and let cook on low for 5 hours or until the pork is fork tender.

When the pork is done, melt some butter in a frying pan over medium heat. Place a soft tortilla in the pan, top with pork, veggies and cheese.

Top with another tortilla. Cook for about 2-3 minutes on each side or until both sides are golden brown and cheese is melted.

Repeat as for as many quesadillas you want to make!

Cut in quarters and serve with sour cream and cilantro!
