Quick and easy, sheet pan chickpea fajitas are a hit with the whole family. These vegetarian fajitas are loaded with veggies, chickpeas, and fajita seasoning and are perfectly served on a warm pita bread shell.
Even though I am not a strict vegetarian, I have my days where I just don’t want to eat meat. Usually a few days a week I will make vegetarian or vegan meals. Sometimes though, those vegetarian dinners can seem super intimidating, and I just don’t want to put in that much effort and time in the kitchen.
Sheet pan meals though have become my go-to! When I want something quick and easy, the sheet pan comes in to save the day.
One of my more recent favorite vegetarian sheet pan meals has been chickpea fajitas. Vegetarian fajitas with chickpeas are just so easy to make and super delicious! They are also perfect for meal prepping so you can have food the entire week.
Sheet Pan Vegetarian Chickpea Fajitas
Like most of my family-friendly recipes, this one only uses a small handful of ingredients. We like to keep it simple over here! But simple doesn’t mean lacking in flavor.
All you will need to recreate these chickpea fajitas are a few veggies, some seasoning, and shells. You can feel free to add any additional toppings that you like to make these vegetarian fajitas your own.
Main Ingredients
- Chickpeas
- Onion
- Mushrooms
- Bell Pepper
- Cilantro
- Fajita Seasoning
- Olive Oil
- Shells- I used pita bread but feel free to use any shell you prefer.
Optional Ingredients
- Cheese – Vegan or Dairy.
- Sour Cream
- Cherry Tomatoes
How to Make Sheet Pan Chickpea Fajitas
Ready to get started? You can make these super quick! between prep time and cook time, these should be ready to get in your belly in about 20 minutes.
All you really have to do is cut the veggies, drain the chickpeas and place them on a sheet pan. Drizzle with some olive oil and season with your favorite fajita seasoning and some cilantro.
Cook for about 20 minutes at 452°! When the veggies are done, plate them up on your preferred shell with your toppings and you are good to go!
Meal Prep Vegetarian Fajitas
I will be going back to work soon, so meal prepping will be extremely important. These fajitas are perfect to make and portion out for workday lunches.
Just cook as you normally would and then put them into your Tupperware containers. They last a good week in the fridge too.
When you are ready to eat them, just heat them up for a few minutes, pop them onto a fajita shell with your toppings and you are good to go!

- 1 Can Chickpeas
- 1 Onion
- 2 Bell Peppers
- Mushrooms
- Olive Oil
- Cilantro
- Fajita Seasoning
- Pita Bread
Instructions

Preheat oven to 425°.

Cut up your Veggies and drain the chickpeas.

Place all the veggies and chickpeas on your sheet pan.

Drizzle with olive oil and season with cilantro and fajita seasoning.

Cook for 20 minutes.

Warm up your pita bread, or taco shells. Top with your preferred toppings and enjoy!
